There is a good deal of effort expended by many semi-educated individuals to discredit the knowledge of calories, saying that it is a foolish food science, a fallacy, a fetish, and so forth.
They reason, or rather say, that because there are no calories in some of the very vital elements of foods--the vitamines and the mineral salts--therefore it is not necessary to know about them. They further argue that their grandfathers never heard of calories and they got along all right. That grandfather argument

It is comprehensible that a person could not have arrived at such afar-reaching change of view by continuing to follow the old beatenpaths, but only by introducing some sort of new idea. Indeed,Einstein arrived at his theory through a train of thought of greatoriginality. Let me try to restate it in concise terms.
THE EARTH AS A MOVING CAR
Everyone knows that a person may be sitting in any kind of a vehiclewithout noticing its progress, so long as the movement does not varyin direction or speed; in a car of a fast express train objects fallin just the same way as in a coach that is standing still. Only whenwe look at objects outside the train, or when the air can enter thecar, do we notice indications of the motion. We may compare the earthwith such a moving vehicle, which in its course around the sun hasa remarkable speed, of which the direction and velocity during aconsiderable period of time may be regarded as constant. I also attended regularly the clinical wards in the hospital. In fact, the history of physical science teaches (and we cannot too carefully take the lesson to heart) that the practical advantages, attainable through its agency, never have been, and never will be, sufficiently attractive to men inspired by the inborn genius of the interpreter of nature, to give them courage to undergo the toils and make the sacrifices which that calling requires from its votaries. That which stirs their pulses is the love of knowledge and the joy of the discovery of the causes of things sung by the old poets--the supreme delight of extending the realm of law and order ever farther towards the unattainable goals of the infinitely great and the infinitely small, between which our little race of life is run. In the course of this work, the physical philosopher, sometimes intentionally, much more often unintentionally, lights upon something which proves to be of practical value. chanic. The editor of a newspaper was always a printer and often composed his articles as he set them in type; so "composing" came to mean typesetting, and one who sets type is a compositor. Now James needed an apprentice. It happened then that young Benjamin, at the age of thirteen, was bound over by law to serve his brother.
James Franklin printed the "New England Courant", the fourth newspaper to be established in the colonies. Benjamin soon began to write articles for this newspaper. Then when his brother was put in jail, because he had printed matter considered libelous, and forbidden to continue as the publisher, the newspaper appeared in Benjamin's name.
The young apprentice felt that his brother was unduly severe and, after serving for about two years, made up his mind to run away. Secretly he took passage on a sloop and in three days reached New York, there to find that the one printer in the town, William Bradford, could give him no work. oils deservemention. The "cold-drawn" Arachis oil (pea-nut or earth-nut oil) has apleasant flavour, resembling that of kidney beans. The "cold-drawn" Sesaméoil has an agreeable taste, and is considered equal to Olive oil foredible purposes. The best qualities are rather difficult to obtain; thoseusually sold being much inferior to Peach-kernel and Olive oils.Cotton-seed oil is the cheapest of the edible ones. Salad oil, not soldunder any descriptive name, is usually refined Cotton-seed oil, withperhaps a little Olive oil to impart a richer flavour.
The solid fats sold as butter and lard substitutes, consist of deodorisedcocoanut oil, and they are excellent for cooking purposes. It is claimedthat biscuits, &c., made from them may be kept for a much longer period,without showing any trace of rancidity, than if butter or lard had beenused. They are also to be had agreeably flavoured by admixture withalmond, walnut, &c., "cream."

Much careful experimenting has shown that it does not. The weight of the products formed in any change in matter always equals the weight of the substances undergoing change.
~Law of conservation of matter.~ The important truth just stated is frequently referred to as the law of conservation of matter, and this law may be briefly stated thus: Matter can neither be created nor destroyed, though it can be changed from one form into another.
~Classification of matter.~ At first sight there appears to be no limit to the varieties of matter of which the world is made. For convenience in study we may classify all these varieties under three heads, namely, mechanical mixtures, chemical compounds, and elements.
